Food and Wine Festival Recipe: Italy’s Tiramisu

The translation of the Italian word tiramisù means "pick-me-up." This refers to the caffeine in the espresso, or strong coffee, and the effect of the cocoa used in the recipe.

Yield: 4-6 Portions

Ingredients

1 cup Heavy Whipping Cream
1/4 cup Powdered Sugar
1 cup Mascarpone Cheese
1 Tbls Vanilla
2 Tbls Coffee Liquor
1 cup Strong Coffee
1/4 cup Coffee Liquor
2 Tbls Powered Sugar
3 doz Lady Fingers
To dust Cocoa Powder

Directions

Combine the cream and powdered sugar and whip to a soft peak then set aside.

Whip the mascarpone cheese with the vanilla and first volume of coffee liquor. Once soft and smooth, fold in the whipped cream to combine.

Mix the second volume of coffee liquor with the strong coffee and additional powdered sugar.

Dip the lady fingers in the coffee to moisten them. Then lay them in a dish to form an even layer.

Spread or pipe an even layer of the mascarpone filling on the soaked lady fingers and repeat for one or two more layers depending on the size and volume of the dish.

Dust the top layer of mascarpone with cocoa powder and refrigerate for a few hours.
